For the almond pastry, mix the spelt flour with baking powder and place on the work surface. Press an indentation in the center. Slit the vanilla pod and scrape out the pulp.
Pour water, vanilla pulp, ground almonds, honey, butter and whipping cream into the indentation and knead everything together until smooth. Form dough into a roll (4 cm ø), wrap in plastic wrap and refrigerate for 1 hour.
Cut the roll into 1 cm thick slices, place them on a greased baking sheet, spread with whipped cream and place half an almond or almond flakes on each cookie.
Bake the almond cookies at 175 degrees Celsius in a preheated oven for 10 to 12 minutes.
