Instructions:

The mole cake is a great cake recipe for any occasion.

To make the cake, prepare the batter. To do this, separate the eggs and beat the egg whites until stiff peaks form. Cream the butter with the granulated sugar, then add the remaining yolks. Mix the dry ingredients together and fold into the butter and sugar mixture. Fold in the beaten egg whites. Pour the mixture into a greased cake tin and bake for approx. 35-45 minutes at 175 °C (gas mark 4).

Meanwhile, whip the cream until stiff, add the vanilla sugar. Fold in the chocolate flakes and the drained sour cherries.

Allow the cake base (dough) to cool and then hollow out in the middle to the edge. Save the crumbs! Spread the whipped cream filling on the cake base and sprinkle the crumbs on the filling now, so that the cake looks like a molehill. Chill the mole cake until ready to serve.

Preparation Tip:

The mole cake looks even more authentic if you put a mole shaped from marzipan and some icing leaves or flowers on top.
