For the stew with ostrich meat, peel the onion, carrots and parsley roots and finely dice everything. Heat the oil in a pot, add the chopped vegetables and sauté.dice the meat and rub with salt, cayenne bell pepper and paprika powder.

Cover and simmer over low heat until done, about 45 minutes.Peel and dice the sweet potatoes, wash and de-stem the beans. Add to the meat after 30 minutes. Peel the garlic and add it. Continue cooking the stew for 10 minutes, add the vegetables set aside and heat briefly. Remove the pot from the heat and stir the sour cream into the soup, which is no longer boiling.
