Instructions:

First prepare the cocoa dough. Separate the eggs into whites and yolks. Beat the egg whites until stiff peaks form.

Sift the flour with the baking powder and cocoa powder and set aside. Preheat the oven to 175 °C.

Cut the butter into small pieces and beat together with the granulated sugar, vanilla sugar and a pinch of cinnamon until fluffy.

Now gradually mix in the egg yolks. Then stir in the flour-cocoa mixture until everything is well blended.

Carefully fold the egg whites into the mixture until you have a smooth cake batter. #Grease a 26 cm diameter cake pan and pour in the mixture. Bake in the oven for about 50 minutes.

While the cake is cooling, slice the bananas and sprinkle with lemon juice. Peel the kiwi and slice it as well.

Cut away the top of the cake layer with a sharp knife so that the layer is still about 1 cm high. Crumble the remaining cake base and set aside.

Top with the bananas, kiwis and tangerines.Whip the cream with the sugar and the pulp of the vanilla bean and the cream stiffener until stiff and spread it on the base like a dome.

Cover with the cake crumbs and form a mole out of marzipan.

Place the mole on the cake before serving.

Preparation Tip:

Decorate the mole cake as you like with petals, roses, marzipan carrots or other decorations of your choice.
