For the cream of pumpkin soup, peel and dice the onion. Cut the pumpkin flesh into cubes as well. Sauté the onion in a pot with hot oil, add the pumpkin flesh and also roast a little.
Pour in hot vegetable soup and cook for 5-10 minutes, add the whipped cream and mix well with a hand blender so that there are no more pieces in the soup.
Simmer briefly, season with salt and pepper and dress with a little pumpkin seed oil.
