Pit cherries, halve strawberries. Whip cream with vanilla sugar until stiff and stir in fruit.
Spread evenly on the unfolded omelets, whip again and arrange on plates.
Mash raspberries with raspberry syrup and raspberry brandy and add the sauce to the omelettes.
