Noodle dishes are always a good idea!

*From the lemongrass, chop the thick lower parts of the stalks.

Skin and crush the garlic.

Peel the ginger and cut it into fine slices at the beginning, then into tiny cubes. Clean the spring onions, rinse and cut into narrow rings. Mix all prepared ingredients with sambal ölek, turmeric, coriander and salt to a thick paste.

When cooled, rinse and dry the chicken breast fillet and cut into 1.5 cm cubes.

Heat the oil in a wok or possibly in a hot pan. Stir-fry spice paste for 2-3 min. gradually stir-fry meat at high temperature for 5-10 min. Extinguish with coconut milk, then thicken the sauce a little. Let the dish simmer at low temperature for another 3-5 min. with the lid closed.

Meanwhile, blanch (scald) the soybean sprouts with boiling hot water.

Put on a saucepan with salted water. Add the noodles to the boiling water, pull apart the nests and cook according to cooking instructions on the package. Drain, rinse with cold water.

Add the soy bean sprouts to the wok or the Reindl and stir gently for about 2 minutes. Finally, stir in the finished noodles and kecap manis.

Serve warm or possibly cooled.

Tip: To make the spice paste, you can save work and time if they all ingredients in the hand stirrer, possibly with the addition of a little bit of oil,
